新酒のしぼりたてにごりですが、
旧作ナチュール ZEROの本当の意味に立ち返り、
原点のドブロクとして生まれ変わりました。
技術的には、天然酵母により自然発酵でありながら、
前作よりも糖度を残し（日本酒度-20）、
テクスチャーもより粒感を残し
江戸時代のドブロクを再現し『江戸返り』しました。
仙禽が提唱する『江戸返り』。
文献でしか知る術がありませんが、
江戸時代の酒造りに限りなく近いと自負します。
この酒造りは、本当に不便であるが、大変やりがいがあります。
現代の日本酒造りの便利さを痛感します。
しかしながら私たちは、決してただの懐古主義ではありません。
その品質や酒質は現代にアップデートされていることを約束します。
天然酵母で木桶を用い、生酛で醸す。
途方もない時間がかかりました。
そして江戸時代のスタイルである「ドブロク」として世に生を受けます。
ここまで自然に振り切ったにごり酒はないはずです。
私たちのナチュールに対するこだわりと愛着の現れです。

This is fresh, newly pressed cloudy sake, but it returns to the true meaning of the previous *Nature ZERO* series and has been reborn as an original-style Doburoku.
Technically, it undergoes natural fermentation using wild yeast, but unlike the previous version, it retains more sweetness (with a Sake Meter Value of -20),
and the texture maintains a more pronounced graininess, recreating the Doburoku from the Edo period, a process we call "Edo Gaeri" (Edo Revival).

Though we can only know about it through literature, we are confident that it is as close as possible to the sake brewing techniques from the Edo period.
This brewing process is truly inconvenient, but it is incredibly rewarding.
We truly feel the convenience of modern sake brewing.

We promise that the quality and sake style have been updated for the modern age.

Using natural yeast, wooden casks, and a Kimoto method,
this process took an immense amount of time.
And now, as a "Doburoku" in the Edo style, it has come to life.
There is no other cloudy sake quite this naturally intense.
It is a reflection of our deep commitment and affection for *Nature*.
