協会６号のベスト１だった純米８号のシングルタンクです。
過去の６号の中でもいちばん良かったのでシングルで詰めたくなりました。
６号の特徴というとなかなか複合的で難しいところが有るんですが、
イソアミル主体でエステルや高級アルコールが強く、
酸がちょっと官能的な印象です。
この純米８号はセレクト６とか言ってるけど、
協会６号の特徴がよく出ているというよりも
総合力で良い酒だなって思える感じの酒でした。

香：全体的に薄い、弱いイソアミル、温かい香り、ほのかに甘い麹香、バニラ、エステル
味：綺麗、なめらか、清涼、緻密、バニラ、イソアミルの吟味、麹の旨味、苦渋、山水
すごくきれいで清涼。劣化するアミノ酸がかなり低いので開栓後は冷酒や常温で。
開栓後の伸びが良いと思われる。酸と吟味の絡み方が６号っぽい。
とてもエレガントなので、ゆっくり時間をかける飲み方がいい。長期保存最高。

This is a single tank of Junmai 8, which was the best among the Association No. 6 strains. It was the best of all the No. 6 versions in the past, so I wanted to bottle it as a single batch. The characteristics of No. 6 are quite complex and somewhat difficult to describe, but it primarily features isoamyl alcohol, strong esters, and high-quality alcohols, with a slightly sensual impression of acidity.

This Junmai 8, though called Select 6, doesn't showcase the typical traits of Association No. 6 as much as it presents itself as a well-rounded and excellent sake overall.

**Aroma**: Overall light, subtle isoamyl alcohol, warm fragrance, faintly sweet koji aroma, vanilla, esters.
**Taste**: Clean, smooth, refreshing, delicate, vanilla, well-balanced isoamyl flavor, umami of the koji, bitterness, and mineral water qualities.
It’s very clean and refreshing. The amino acids, which typically degrade over time, are quite low, so it's best enjoyed cold or at room temperature after opening. It’s expected to improve after opening. The interplay of acidity and refined flavors is characteristic of the No. 6 strain.
It’s very elegant, so it’s best enjoyed slowly over time. Ideal for long-term storage.
