美田地区の圃場にて復活させ生仕込みにてお届けするプロジェクト第一弾。
初めての「愛国」は、想像以上に力強く骨太の印象にも関わらず
淡麗で繊細なアフターと凛とした清廉感と
ホンの僅かな苦味や渋味が大人の余韻と広大な広がりを感じさせます。

The first phase of a project to revive the three major rice varieties from the Meiji era, "Aikoku," "Shinriki," and "Kamenoo," in the fields of the Bidata region and deliver them using traditional brewing methods.

The first-ever "Aikoku" is surprisingly bold and robust in flavor, yet has a delicate, crisp finish with a clean and refined aftertaste. A subtle bitterness and astringency provide an adult-like afterglow and a vast, expansive feeling.

The rustic and cool profile of the sake, as the temperature rises, reveals the touch of a classic-style Japanese sake. This sake offers a unique experience, blending modern and classic qualities that can be enjoyed even when warmed. It is an intriguing sake whose appeal evolves with the temperature.

Through further refinement in brewing and aging, there is also potential for even more complex flavors in the rice.
